Autumn Olive Berries & Fruit Leather

The abundance of Autumn Olive berries near my home made for an easy harvest. These two mason jarfuls of the tart berries were made into fruit leather. I used a blender, strained the seeds out and than dehydrated the juice and pulp on a cookie tray. It remained quite a bit tart for my taste but I wanted to experience the primary ingredient without dilution.  Next time, I’ll probably add some sugar to sweeten the flavor.

Turns out the berries taste much sweeter after a few frosts.

Peel and roll your fruit leather slowly.
