Recipe for Garlic Mustard Pesto (Alliaria petiolata)
Garlic mustard is an abundant invasive plant easily found on the woodland floor of New Jersey. It’s been said “eat em to beat em” regarding many of our edible invasive species so I thought I would share with you all my experience making garlic mustard pesto sauce. It makes a decent sandwich dressing, can be used as a garnish on meats, used with pasta or as a dip.
All Natural Ingredients: ¼ lb garlic mustard, ½ cup olive oil, 2 tbl spoon lemon juice, 1 teaspoon salt (Kosher or pink Himalayan)
You can also choose to add: Parmesan cheese, Garlic, Pine Nuts.
Directions: Wash young Garlic Mustard leaves. Add all ingredients into a food processor and blend till smooth. Makes about 1.5 cups.
