The Jersey deer hunting season is closed now until September. I enjoyed many serene days in the woods and harvested five deer, donated two to "hunters helping the hungry" and another was split among some friends. Some were harvested off an organic farm property to prevent crop loss.

I found some ice in my home town and pulled up a few yellow perch aka golden crispies. Highly versatile, they can be pan- and deep-fried, baked, sautéed, poached, grilled or used in chowder. Avoid overcooking to keep the flesh moist. They have a mild flavor that's really tasty with minimal seasoning. My preference when pan frying while camping is to cook with the skin on for maximum meat but I just filleted these to fill a quart bag and put them in my freezer for another day.
