Fresh chicken of the woods (Laetiporus sulphureus) is a versatile prime choice mushroom that can be used in many dishes. My wife is an excellent cook and always has a tasty meal in mind. One of my favorite ways to enjoy Chicken of the Woods is fried and put on a fresh bun with lettuce, tomato and a spicy mayo or take the fried pieces and add some marinara sauce and enjoy with a pasta.
Step 1: Find it fresh! It should be of bright coloration, dripping juice, spongy soft and surprisingly heavy when you slice it free from its host.
1. Coat the chicken in flour and then egg yolk and then bread crumbs.
2. Repeat step 1.
4. Place the coated chicken mushroom into hot olive oil on a fry pan and cook until golden brown on both sides.
